True tequila is only produced in Mexico, and it has deep historical roots that parallel the turbulent evolution of Mexico itself. The Spanish conquistadors were the first to distill agave, making tequila into one of the first indigenous distilled spirits in what would become North America. Today, tequila must still be made from the ores, or “piñas,” of the blue agave plant that only grows in a few spots in Mexico.
The cores are roasted and ground, then the resulting extract will spend time fermenting. From there, the tequila is distilled and then aged to perfection in the signature toasted barrels that impart that unique rich flavor.
